All about my sugar free ice cream idea
One of my first steps in going sugar free was trying to find recipe substitutes for my favourite desserts. I love making and eating ice creams (in my cute ice cream maker!) and I thought if I did find a way to make it sugar free and healthy then it would truly keep me happy! My initial healthier ice cream recipe had corn syrup and sugar though I used low fat cream, milk and cheese (I made a healthy version of Jeni’s ice cream if you have heard of it). It however has sugar and my low fat cream was made from oils!
I was at my nerve’s end wondering what to do- as I desperately needed chocolate, and I came upon this idea using similar ingredients from my sugar free healthy chocolate brownie. Sugar free dark chocolate ice cream dreams…
This is a sugar free dark chocolate ice cream recipe because you always need chocolate- well at least I do! This homemade sugar free ice cream is made using my favourite natural sugar alternative- dates. Not only do the dates add sweetness it also contributes to the texture of the ice cream. This recipe can be easily dairy free and vegan as any milk can be used as the main purpose of this milk is to combine and bring everything together.
The main good fat content in this ice cream is my all-time favourite cashew and almond butter! This ice cream is hence cholesterol free as it is made without any cream or refined sugars. You can use only almond butter or only cashew butter. I like to use a mix of both to get the best of both nutrients from the two. You can also just soak cashews and/ or almonds for a few hours, drain and grind to a paste for this recipe but I find using nut butters easier. I added some sugar free chocolate chips as well as cacao nibs to intensify the chocolate flavour but this is completely optional. I really hope you try making this and enjoy the first of my many sugar free dessert recipes!

- Buy dates in bulk from a good online store. I use Buy Healthy Foods online and like the quality of dates they send me. I prefer deglet noor dates to medjool, firstly because it is much cheaper, especially when you use it in great quantites like me-which I hope with time you will as well. Secondly deglet noor dates have a better chew and bite and give a great texture to your dessert, whether it is a body to your healthy ice cream or mousse or a chew to your brownie or cake. Buying them bulk will save you money and it lasts a long time without any fuss.

- One of the sugar free ice cream brands, UK that I discovered was Oppo ice cream. I got to try their ice cream at the BBC Good Food show and was blown away! They make sugar free ice cream without artificial sweeteners as they use stevia. They also add coconut oil to get the texture. The caramel one I had was amazing! They made it with the super food lucuma and the calorie count per serving was ridiculously low! Grab a box as soon as possible as it is a must try. I was so pleased to find them in my local Waitrose!
