Soak the dates in hot water for 5 minutes. Drain completely.
Place the brazil nuts and chia seeds in a food processor and process till it becomes a rough powder. Remove this nut mix from the processor and set aside.
Add the dates to the processor. Process till completely broken down and a becomes a rough paste.
At this stage to the date paste, add the powdered nut and seed mix, as well as the protein powder, rose water and coconut oil.
Process till it is well combined and becomes a ball. You may have to stop the processor once or twice and scrape down the edge. If it does not become a a dough like ball then add a little water or coconut oil.
When ready the mix should be smooth and shiny and easy pliable. Roll into small balls. This recipe should make ten small energy balls.
Now for the garnish. Roughly powder the pistachio nuts and place in a container or shallow dish. Mix in the dried rose petals if using. Roll each ball into this mix. Use as little of your hands in rolling as the shape may change. Instead tap and shake the bowl or dish to get an even coating of nuts and petals.
Eat immediately or keep refrigerated. It hardens once in the fridge and can easily last for anywhere between two weeks to a month.
