Today I would like to share a super simple recipe for a cocktail on a stick- Pina colada ice pops! You know how I love making ice popsicles and I couldn’t resist sharing a recipe for some delish boozy popsicles.
Pina colada is my favourite cocktail. Its heady combination of pineapple-coconut milk with a heavy serving of dark rum takes me straight to tropical beaches and sunny holidays! When I was a teen I went out for dinner with my aunt and her friends, and just so I did not feel left out, they ordered a virgin Pina Colada for me. Ever since then I have been hooked..of course I moved on to the ‘adult’ version of the drink! What with my love for this delicious coconutty drink as well as my craze for popsicles I had to create and share this recipe for Pina colada ice pops!
My recipe for these alcoholic popsicles is made with fresh and clean ingredients and with no added sugars. These vegan adult ice pops are made with just fresh pineapple, additive free coconut milk, a dash of maple syrup and lots of good quality dark rum. I recommend using a very ripe pineapple for a super sweet touch without the need for any added sugars.
