Hello! I hope you enjoyed my previous post on how to make three kinds of almond milk from scratch. You can read all about it here if you missed the article. Today I would like to share a super simple recipe for a cocktail on a stick- Pina colada ice pops! You know how I love making ice popsicles and I couldn’t resist sharing a recipe for some delish boozy popsicles.

Pina colada is my favourite cocktail. Its heady combination of pineapple-coconut milk with a heavy serving of dark rum takes me straight to tropical beaches and sunny holidays! When I was a teen I went out for dinner with my aunt and her friends, and just so I did not feel left out, they ordered a virgin Pina Colada for me. Ever since then I have been hooked..of course I moved on to the ‘adult’ version of the drink! What with my love for this delicious coconutty drink as well as my craze for popsicles I had to create and share this recipe for Pina colada ice pops!

My recipe for these alcoholic popsicles is made with fresh and clean ingredients and with no added sugars. These vegan adult ice pops are made with just fresh pineapple, additive free coconut milk, a dash of maple syrup and lots of good quality dark rum. I recommend using a very ripe pineapple for a super sweet touch without the need for any added sugars.

Instructions
  1. Puree the fresh pineapple (make sure it is as ripe) with 3 Tbsp of the dark rum in a blender. Set aside.
  2. Blend the rest of the dark rum, coconut milk and maple syrup or honey. Check the alcohol intensity. Add more rum if you want to make it more boozy. Set aside.
  3. In an ice popsicle mould, add a Tablespoon of the pineapple puree into each mould. Then fill it up with the coconut milk-rum combination.
  4. Place the lid, insert the sticks and freeze for a minimum 4 hours, I prefer to freeze it overnight.
  5. To unfold, briefly hold the ice-popsicle mould under hot water. A few seconds will do. Then holding the mould with the sticks facing downwards, squeeze the popsicle in one hand and the tug the stick downwards with the other hand. Do this gently and it should slip out of the mould.
  6. Place it in a baking paper lined tray or plate and freeze again for another hour or so as the un-moulding would have made it melt. Place in a zip loc bag in the freezer and pull out whenever your are in the mood for a boozy ice pop!
