Healthy Breakfast Parfait
Hello! Today I want to share with you this beautiful healthy breakfast parfait recipe. A traditional parfait is layers of fruit, cream, cake and custard or ice cream. A breakfast parfait is similarly made with layers of breakfast ingredients like granola, fruit, yogurt and ice cream. As you know I post regularly during the week on Instagram and healthy breakfast parfaits are one of the popular features after smoothie bowls in the healthy Instagram world. I was inspired by so many beautiful accounts and started creating versions of my own.
I usually like to make my healthy breakfast parfaits with layers of chia see puddings as it gives a great nutrition boost. One of my first few blog posts was that of a blueberry compote chia parfait, check out the recipe here if you have not already. This time however I wanted to make it with another breakfast/ dessert favourite of mine- nicecream.
Nicecream for Breakfast!
Nicecream are frozen fruit based icecreams usually with banana. They are made using very ripe fruit which is first frozen and then created in a food processor or blender. These nicecreams are sugar free, dairy free and do not require an ice cream machine. Anyone can make these delicious frozen desserts. Due to the natural sweetness from the ripe fruit, you do not need to add any sugar and the creamy texture from the frozen fruit means you do not need to add any dairy or fat. This makes it a perfect breakfast addition. All you need to do is peel and chop very ripe or overripe bananas or any fruit and keep it in your freezer. This is the best way to use overripe fruit rather than throwing it away. This will ensure you can make it quickly for your daily breakfast. This breakfast parfait is layered with a mix of tropical fruit like mango, kiwi and passion fruit as well as blueberries for its colour, texture and flavour. You can add any available fruit of your choice. I have also added some passion fruit into the nicecream mix. This gives it additional flavour. I love the perfumy scent of passion fruit and add it into as many meals as I can. The base layer of this breakfast parfait is some shop bought, sugar free granola made with heart healthy fats.
