Hello! Today I am excited to share this recipe for a nutrient packed, beautiful sweet potato pie. One of the first things I discovered in the Hong Kong markets were these beautiful sweet potatoes and I was thrilled to find such a vibrant vegetable to add to my meals. I have been making a variety of recipes and one of them is this marble Sweet Potato Pie.marble sweet potato pie 1

I had been seeing a variety of sweet potato pie versions on Instagram during Thanksgiving time a couple of weeks ago. I wanted to make something similar but with a twist. I decided to marble the sweet potato pie using the two different coloured sweet potatoes and I was so happy with the results! I really love the shades and colours in this pie, and it couldn’t have been possible without my market find! Of course this sweet potato pie can be made in a single shade using either purple or yellow sweet potatoes. The purple sweet potato only adds to the look and has no different flavour.

The filling of this sweet potato pie is made with a combination of tofu, almonds and starch to provide a creamy texture. This is hence also a vegan pie filling as it is made with no dairy or eggs. I have used dates as a sweetener with a small addition of maple syrup ensuring this is a refined sugar free pie as well.

I am also so pleased with the recipe for the gluten free crust. Made with sunflower seeds and oat flour, it is made without any lard or traditional butter. Coconut oil is used to helped bind it together but the fat from the seeds also helps. This crust is so flaky and light that you will not believe it is made without butter. It truly compliments the creamy sweet potato pie filling.

Instructions
For the Pie Base
  1. Lightly grease a 12 inch pie dish with coconut oil. Preheat the oven to 175C. Blitz the sunflower seeds and the flax seeds in the blender into a fine powder. Do not over grind or it will become a paste.
  2. Combine all the ingredients for the pie crust except the water in a food processor. Let it combine and for a rough powder. Slowly add water a tablespoon at a time. When it starts clumping up and forming a sort of a ball, you know the dough is ready. Remove it from the food processor and knead it into a ball, wrap it in cling film and leave to harden in the fridge for 20 minutes. If you do not have a food processor knead it with your hands in a big mixing bowl.
  3. Cut two large pieces of baking paper. Press down the pie base between the baking sheets and using a rolling pin, roll out to a 1 cm thickness. Keep the pie dish close to you. Peel the top layer of baking paper, then using the bottom piece of paper to help you life the pie crust and quickly place it over the pie dish. Since this is a gluten free pie crust it can be very delicate and break easily so handle it with care.
  4. Do not worry if bits have broken or cracked. Cut out the excess pie pastry, using your fingers, smooth over any cracks and tears. Press the pastry up the edges of the tin. Prick all over with a fork and blind bake in the oven for 20 minutes and light golden. Remove from the oven and let it cool slightly.
For the pie filling
  1. While the crust bakes in the oven. In a blender, blitz the soaked almonds, dates and 2 cups of water till it becomes a fine puree. Add the tofu, starch, maple syrup and all the spices and blitz again till smooth. Divide this mixture into two.
  2. Add one half of the mixture into the blender along with the yellow sweet potato mash. Blend till it is well combined without any lumps. Set aside. Blend the other half of the tofu-date mixture with the purple sweet potato mash and blend till well combined without any lumps. Set aside.
  3. Once the pie crust is slightly cool to touch, start adding the sweet potato filling. Add one spoon of purple sweet potato and one spoon of yellow sweet potato filling. Keep adding big spoons of the filling next to each other. Then using a blunt knife, drag the yellow filling into the purple and vice-versa. This is to give the marble effect. Do not over do the swirls or all the colours will mix and you will not get the marble effect.
  4. Bake in the oven for 40 minutes at 175C. Remove from the oven and leave it to cool completely. Decorate with toasted walnuts or pecans.
