Once you have decided which flavour you will be making, grind the ingredients under the mix of choice into a powder. In case of the Zatar blend, the sesame seeds do not have to be completely powdered.
For the Makhana
Pre-heat the oven to 180C. Line a baking tray with Parchment paper and spread the makhana into a thin layer. Bake in the oven for 10 minutes but keep an eyes on it after 5 minutes. It needs to be a very light golden when ready.
While the Makhana or cereal puffs is baking, make a paste of 2 Tbsps of either the ‘cheese’ blend, the Zatar blend or the BBQ blend along with the coconut oil and set aside.
Remove from the oven and place the Makhana or puffed cereal in a box or bag.
While the Makhana is still hot, add the spice-oil paste to the bag or box. Seal the bag or close the box and shake thoroughly again. Make sure that the spice paste completely coats the Makhana thoroughly.
