How to make Almond Milk?

Ingredients
Full Fat Almond milk
Skimmed Almond milk
Sweetened Almond milk
Instructions
  1. Whichever type of almond milk you are making, first measure out the amount of almonds you need, place in a bowl and cover with filtered water. Cover and leave it on your kitchen counter top overnight or for 6-12 hours. Drain the nuts and rinse thoroughly.
For the full fat milk
  1. Add the soaked almonds and 375ml/ 1.5 cups of filtered water in a blender and blend till completely smooth and white. If you have a high speed blender this should take 30 seconds. A regular blender will take 2-3 minutes.
  2. Place your nut milk bag in a large bowl or place you sieve over a bowl and cover with a muslin cloth (like in the images above). Pour the nut milk into your nut milk bag or sieve. If you are using a nut milk bag then tighten the draw string and squeeze till all the liquid comes out. If you are using a sieve and muslin cloth then press down with at the back of spoon till it all the liquid comes out.
  3. Pour into a bottle and refrigerate. This makes two glasses of thick almond milk. It should last for 5 days in the fridge.
For the skimmed milk
  1. Add the soaked almonds and 750ml/ 3 cups of filtered water in a blender and blend till completely smooth and white. If you have a high speed blender this should take 30 seconds. A regular blender will take 2-3 minutes
  2. Place your nut milk bag in a large bowl or place you sieve over a bowl and cover with a muslin cloth (like in the images above). Pour the nut milk into your nut milk bag or sieve. If you are using a nut milk bag then tighten the draw string and squeeze till all the liquid comes out. If you are using a sieve and muslin cloth then press down with at the back of spoon till it all the liquid comes out.
  3. Pour into a bottle and refrigerate. This makes four glasses of skimmed almond milk. It should last for 5 days in the fridge.
For the sweetened almond milk
  1. Soak the dates in hot water for 5 minutes. For either full fat or skimmed almond milk add the dates at the time of blending the nuts and water. Then follow the steps using a nut milk bag or sieve. Storage is same as above.
