  1. Grease a 9 inch tart tin, ideally with a removable bottom with butter or ghee. Pre heat the oven to 200C
  2. Place all the ingredients for the broccoli crust in a food processor and process till well combined. It should be crumbly and not a paste. If you do not have food processor then grate the broccoli finely and mix in all the ingredients by hand till well combined. Press down into the tart and make an even layer.
  3. Blend the ingredients for the filling in a food processor till well combine and frothy. Or use a hand held beater or whisk and beat/whisk till well combined. Pour it over the broccoli crust.
  4. Place the sliced tomatoes on top of the filling and intersperse it with the basil leaves and sliced olives. Place gently in the hot oven to bake for 40 minutes. In the last 10 minutes (after 30 mins) increase the heat to 220C. It should become golden brown and raised.
  5. Serve immediately if you want it hot and fluffy. Or let it cool down a bit and serve it warm with a side of massaged kale salad.
