Hello! Today I am sharing this delicious healthy dinner recipe for a healthy Tomato Basil Quiche. The most exciting part about this quiche is the crust! Made completely out of liver supporting Broccoli! Recently people have been asking me to share more healthy dinner and meal recipes. I actually have a big sweet tooth and have ended up creating so many healthier sugar free desserts mainly to satisfy myself! I however make a healthy dinner filled with vegetables with organic dairy or chicken or wild caught fish almost everyday. So I have decided to share more of my dinners with you, so that you get inspired to eat healthy and nutritious food everyday!

How to make a Healthy Quiche filling?

Usually quiche can be quite heavy and rich with a butter pastry crust and a cream based filling. This healthy tomato basil quiche is firstly made health by using organic full fat milk and free range, pastured eggs. A great source of protein, omega 3 fatty acids and saturated fats, to ensure a delicious and creamy filling without any unnecessary heaviness. I used a popular combination of cherry tomatoes and fresh basil as well as black olives to ensure an Italian touch.

How to make a No Roll Pie crust?

For the crust in this healthy tomato basil quiche I made it completely out of broccoli. I used a food processor to crumble the florets and I added a few herbs for flavour and voila! A gluten free crust was created! The best thing about this crust is that it does not have  the hassle of rolling out the pastry, using any butter or lard or following precise instructions. You just need to press it down into the tin making an even layer and hence this is also a no roll pie crust! I think this crust would also work great made from Cauliflower or carrot.

Instructions
  1. Grease a 9 inch tart tin, ideally with a removable bottom with butter or ghee. Pre heat the oven to 200C
  2. Place all the ingredients for the broccoli crust in a food processor and process till well combined. It should be crumbly and not a paste. If you do not have food processor then grate the broccoli finely and mix in all the ingredients by hand till well combined. Press down into the tart and make an even layer.
  3. Blend the ingredients for the filling in a food processor till well combine and frothy. Or use a hand held beater or whisk and beat/whisk till well combined. Pour it over the broccoli crust.
  4. Place the sliced tomatoes on top of the filling and intersperse it with the basil leaves and sliced olives. Place gently in the hot oven to bake for 40 minutes. In the last 10 minutes (after 30 mins) increase the heat to 220C. It should become golden brown and raised.
  5. Serve immediately if you want it hot and fluffy. Or let it cool down a bit and serve it warm with a side of massaged kale salad.
