Healthy Snicker Ice Cream Bars

healthy snicker ice cream bar 5Lately I have been making a variety of healthier desserts and chocolates. The challenge that I usually give myself is to create these recipes with as much nutrition density by adding alternative healthy ingredients. I also do not want the ingredients to be too complicated and difficult to find. This has made by dessert creation adventures more challenging but also more satisfying! I just want people to realise how easy it is to eat and be healthy on a daily basis. I believe by recreating your favourite foods with better and nutritionally dense ingredients, you no longer have to ‘give up’ your favourite foods or eat with guilt.

This brings me to my latest recipe creation of these healthy snicker ice cream bars. I have been wanting to recreate a healthy version of this chocolate since ages. This means a sugar free version, ideally dairy free as well. Now this is quite a task, because a snicker bar is basically a combination of sugar and peanuts. I decided to use two ingredients which are packed with natural sugars as the sweeteners, bananas and dates. With this winning combination, I set out to recreate this dessert.

The Peanut Butter…

First on the list to making these healthy snicker ice cream bars is the Peanut butter. Pic’s Peanut butter is a New Zealand based company which recently launched in the UK. They sent me their peanut butter to experiment with and recreate recipes. I was really impressed with quality and flavour. If you love peanut butter, then you have to try this Pic’s Peanut Butter! Firstly the ingredients are super clean. It only has peanuts and salt. Which is quite amazing, because most peanut butters have palm oil, emulsifiers and sugar. Just check then ingredient list on your regular peanut butters and you will realise this. Secondly even though they have nothing extra added the texture and flavour is brilliant. This is because of the quality of peanuts they use.  Their peanuts are sourced from Australia and have a high oleic content. Which brings me to my final reason on its quality. The high oleic content means that is has a higher source of mono-unsaturated fat than regular peanut butters. These are the fats which are heart friendly and help lower LDL or bad cholesterol and improve HDL or good cholesterol. I used a combination of their crunchy salted peanut butter and their smooth salted peanut butter.

 The Easiest healthy ice cream- Banana Nice cream

Next I made the world’s simplest and healthiest ice cream using frozen ripe bananas. If you have not heard of nice cream or nana ice cream, then this recipe is an amazing one to introduce you to the joys of fruit based ice creams. All you need to do is freeze some ripe bananas. The blacker your bananas get the better! You no longer need to get rid of over ripe bananas. Just peel and chop your ripe bananas and place in a freezer safe box or bag for a few hours and you are good to go. This nice cream requires no ice cream maker and can be made in minutes in your food processor or blender. I used some crunchy peanut butter to add to the texture and flavour.

The Healthy Caramel…

The caramel for these healthy snicker ice cream bars was a simple affair as well. I just combined dates and smooth peanut butter to create a sugar free, dairy free, delicious peanut butter caramel. Finally for the chocolate I used shop bought raw chocolate. You can read about my favourite brand of raw chocolate in my previous post here. Alternatively you can use any dairy free, sugar free store bought chocolate or your own homemade raw chocolate.

Well there you have it, a simple recipe for healthy snicker ice cream bars. Kids will love this and adults too will get excited with these delicious bars of peanut butter heaven. Instructions
For the Banana Ice cream/Nice cream
  1. Peel, chop and freeze the ripe bananas in a freezer safe bag or box. Depending on your freezer this should take 4-6 hours. Ideally you can do this the night before you decide to make this recipe.
  2. Line a rectangular tin or glass dish with parchment paper or cling film.
  3. Using a food processor or high powered blender add all the frozen bananas. I prefer a food processor, because a blender can generate too much heat and may turn it into a milk shake. A food processor provides the ideal 'ice cream texture'.
  4. When using a food processor, you will need to pulse it a few times and scrape down the frozen bananas. At first it will look like crystals but eventually it comes together to an ice cream texture. This should take 4-5 minutes depending on the quality of your food processor.
  5. When it becomes an ice cream texture, add the vanilla powder/essence and the peanut butter and pulse two or three times till well combined. I used crunchy peanut butter for the nice cream but you can use what you have.
  6. Using a rubber spatula, spread the peanut butter-banana nice cream into the lined tin and flatten out. Make an equally thick layer and place the dish into the freezer.
For the date caramel
  1. While the banana nice cream sets in the freezer, start the date caramel recipe. Soak the dates in hot water for 10 minutes.
  2. Drain the dates but save the water to be used later for the recipe.
  3. Add the dates, coconut oil, peanut butter (I used smooth salted peanut butter), 4 Tbsp of the reserved water and vanilla powder in a high speed blender. Blitz till it becomes a fine and silky texture.
  4. Let it cool down to room temperature.
For the layering
  1. Add a layer of roasted peanuts over the frozen banana nice cream layer.
  2. Then pour a layer of date caramel over the peanuts. Place in the freezer to set for another 2 hours.
  3. Melt the raw or dark chocolate till liquidy. I do this by putting it in a microwave for 20 seconds and then stirring till it completely melts. You need to ensure when melting the raw chocolate not to let the temperature increase over 42C. Or else the it will lose the properties of being a raw chocolate. Keep aside in a wide and deep dish.
  4. After the date caramel has set and frozen completely, remove the slab of frozen from its container and pace on a chopping board. (This should be easy if you have pre-lined your tin/dish with cling film or parchment paper) Using a sharp knife make 6-8 narrow rectangle bars. The depth and width of a regular snicker bar.
  5. Line another tray or plate with parchment paper.
  6. Quickly dip each frozen snicker bar into the melted chocolate. Let it cover the entire bar. I find using two forks to do this convenient. I find it helpful if the chocolate is in a deep dish. This ensures complete coating of the bar in an easy manner. make sure the melted chocolate is cool and not warm as it will melt the ice cream layer.
  7. Place each chocolate coated bar on the lined tray/plate without it touching each other. Freeze again for a minimum 1 hour.
  8. Once completely frozen you can put them in a freezer safe bag and pull them out to eat whenever in the mood!
