  1. Pre heat the oven to 180C. Lightly grease a bread tin with coconut oil and line it with baking paper. Grind the walnuts/pumpkin seeds and chia seeds/flax seeds together into a rough flour. Combine it with the amaranth flour, baking powder, salt and vanilla powder.
  2. Mash the bananas using a fork. Add the eggs, coconut milk / milk of choice, honey/maple syrup and whisk till well combined. Add the walnuts/pumpkin seed-amaranth flour mixture and mix till it is all well combined. Add the cacao nibs and chocolate chunks to the mixture at this point and stir through.
  3. Scrape this mixture into the prepared tin and spread it evenly with the back of a wet spoon. Sprinkle over the walnut bits/Pumpkin seeds as an optional topping.
  4. Bake for 75-90 minutes till golden hued in colour. Use a toothpick and prick it in the centre and if it comes out almost clean it will be ready. Remove from the oven and let it cool for an hour or so. Then using a knife losen the edges of the bread and turn it over a plate, you may need to firmly bang it down on the plate or tray for it to come out. Remove the baking paper. I prefer to let it chill for a few more hours before slicing. You can also slice it at this point but carefully with a good quality bread knife.
