Hello! Good morning! Today I am so thrilled to share with you a recipe for the healthiest Chocolate brownies ever! This is no exaggeration! Made from Avocado, Bananas, Black beans and lots of cacao powder these brownies are intense, moist, fudgey, and packed with nutrients! This recipe is also super simple. A few basic nutrient dense ingredients and you are good to go!
I created this combination of ingredients after I stumbled upon this wonderful recipe for Chocolate Chunk cookies on Pinterest. Josefine had created these absolutely intense chocolate cookies using avocado and cacao. She created it using coconut sugar and suggested adding a ripe banana instead to reduce the coconut sugar. Well since I never stick to a recipe, I also added some flour and other things and created these most wonderful tasting chocolate cookies but they were more cakey then cookie like in texture due to the reduced added sugars. This made me realise that it would taste amazing as a dense chocolate brownie and hence the idea for the healthiest chocolate brownies was born!
When I was selling my Indian flavoured snacks in London, one of the recipes was a Vegan Chai Caramel Brownie made using black beans. Hence I wanted to make this brownie with black beans. It is just a great nutrient dense addition to these brownies as well as a wonderful substitute for flour. This is the only ‘flour’ addition to these brownies, the rest is made up of Avocados, bananas and cacao! I soak my black beans over night, throw the water and cook in a pressure cooker. You can use tinned beans if you prefer. You can also use any type of beans as well as chickpeas.
These brownies I made with Pastured eggs. Pastured eggs are free range eggs from chickens which have been given organic feed as well as allowed to eat their natural food like grass and grubs. Hence it has a higher level of Omega 3 fatty acids, Choline-which is excellent for brain function and memory and Vitamin D to name a few. It also helps to reduce your dietary cholesterol levels. My previous recipe for Rainbow Lemon Tarts are also made with pastured eggs and I think they are a great healthy ingredient to add to your baking and meals. If you are a vegan or have egg allergies, then use two Chia eggs or flax eggs instead.
Next for these healthiest chocolate brownies, it is critical to use only very ripe avocados and bananas. The avocados need to be very soft but not brown or black. The bananas can be as ripe and black on the outside. If the avocados are not ripe enough they impart a weird after taste which is not so palatable. The avocados act as a fat substitute. Hence you do not need to add any butter or oil to make these brownies. The bananas here act as both a source of fat as well as a sweetener, you can then add less coconut sugar to make these brownies.
Finally the intense chocolate flavour is important for these brownies. Use the highest quality cocoa powder you can get your hands on. Do not be scared about the amount you need, it really adds to create a rich and intense chocolate flavour. In addition I also add chocolate chunks. I use 99% dark chocolate as I do not want any added sugars but just the flavour and the joy of biting into a chunk of chocolate in the brownies. Use any good quality dark chocolate of your choice, ideally something without added sugars.
Now can you understand why these are the healthiest chocolate brownies ever? With ingredients like avocado, bananas, black beans and chocolate, this is such a guilt free delight perfect for all your chocolate cravings! These brownies have to be eaten chilled! This is super important, heating them up makes them taste funny. Let them cool completely after baking, then make into slices and cool in the refrigerator before eating. I promise you its worth the wait!
